I've got some horseradish newly growing in my backyard - it's one single large healthy plant. If I dig up some root and shred it freshly for this recipe will that work or does the horseradish need to sit and ferment for while or be processed in some way as opposed to raw?
The fresh stuff is pretty potent, so if you like your horseradish fierce, then go for the raw. I'm jealous because I like the bite of fresh. :) You can also pickle it to preserve it. The spouse is diabetic and for that reason I get stuff that is prepared with basically vinegar and salt, but it does remove some of the bite that the fresh has.

My smoked chuck this weekend was a fail. It should have gone longer. I took part of it and made chili out of it the next day which turned out well. Froze the rest to do the same this fall/winter.

@Burnt State
since I've gone down the grilling/smoking rabbit hole and am reading books on the topics, I found this tip you can try in the oven (Southern Smoke by Matthew Register):

Normally when I do ribs I foil them for 2-3 hours low and slow and then uncover to lather with BBQ sauce and caramelize that.

I would imagine the brown sugar would dissolve into quite the.glaze on the ribs after that to make a sweet rib so long as you don't burn those sugars. I'll try it.

I recently found a roasting rack and pan that the folks picked up for me at Costco one year (it was shoved to the back of the cupboard). I've been having good luck with roasting chicken thighs on a rack in the oven when the weather here won't let me grill. It's got holes on a raised stand that fits inside a deeper pan instead of a wire rack, so good for smaller cuts of meat like thighs. I have a few more options this winter when the weather isn't conducive to grilling outside. I might try the ribs inside, even.

Currently looking for a diabetic friendly brownie recipe, because there's a good chance we are going to get legal marijuana in the next year or two. Huzzah!

No sugar brownies

Healthy Date Brownies

Low sugar and no sugar baking always requires either plant based sweeteners, or the use of fruit as a sweetening agent - though the fruit itself is going to still bring some carbs into the blood sugar.

I find a lot of the zero-sugar sweeteners to have their own odd flavour that needs to be masked with other stronger flavours. I see a lot of recipes try to enhance flavour using almond flour and/or almond butter. It's probably best to do a lot of experimentation to find the recipe that you and yours enjoys the most in terms of what flavour works for you. This is hard to do because you often have to fork out a lot of cash to buy those plant based sweeteners to try them out.

Diabetic Brownies

Using monkfruit seems to be the way to go as it has zero glycemic impact. I have not tried this myself yet.

Thanks, that will give me good starting place. I went mostly sugar free in solidarity with the spouse who is diabetic, so I do know my way around the plant based sweeteners. If I have a good base recipe, I can always tweak the sweeteners. I found a stevia powder that is far less bitter than most of the stevia based sweeteners available in stores and 4 ounce bag of it lasts me over a month. Even without the weed, I'm tempted to make a celebratory batch of brownies because this week has been pretty fabulous.

I have a neighbour who used to routinely make laced brownies that were so powerful just taking one piece was enough to launch you into outer space, and then get so wonky you ended up getting sick or passing out. This happened once to me and I told him - way too much material in there, dude. He didn't listen. He was always fine with it, but he is built like an ox and has extremely high tolerances. He then knocked out an entire fishing party with his brownies. Finally he got the message....so the moral of the story is mind your THC volume when cooking.

I hear you. I stayed up all night to watch your midterm results and was relieved to see that the American electorate still has their own power intact. Hopefully your economy will now turn itself towards serving the masses as opposed to serving the ultra wealthy. All that talk about the cash the corporate gods are making, stock market booms, gold ballrooms and arches are both insulting to the majority of American and sounds like the King boasting to the starving serfs about how great the castle is looking these days after he took all their wheat.

The fights are just beginning. There's a lot of discussion around AIPAC, and how Israel should maybe not get anymore money from us. Also, the rabble-rousers don't want to see Schumer or Jeffries in leadership. It's gonna be interesting. Hopefully they don't get so bogged down in internal squabbles that nothing gets down, because there are some people that need to pay for enabling Trump.

Hopefully there will be lessons learned from the last time around. Wasting time on impeachment when the supreme court stands by their man makes no sense. Though I can see them going after Hegseth who will be pardoned with everyone else. But yhe checks and balances of America that I saw in those cartoons growing up just disappeared with this presidency.

If people are smart Congress will work on serving their people and take on the proper role of good leadership, not the other away around. If people want to get voted in then they need to ditch the squabbling and demonstrate that they have the capacity to actually govern and make things happen instead of wasting everyone's time while the country flounders economically.

I also feel that America suffers from an entirely distorted foreign policy, with so many different international relationships upended, especially with its long standing allies. I really don't get the cozying up to Russia. It's unprecedented. Is it a Bro thing? Is that all Trump aspires to?

All politicians starting now, need to work for the betterment of the people. This last vote was pretty clear on all the hot button issues including Israel, tariffs and war.

Some of the reporting you probably aren't hearing is that we have a couple groups that are working with states to go after some of these jokers, because Trump can't pardon people at the state level. :D
Yeah, the foreign policy has been a crap show. I think the orange one is very susceptible to ego stroking from male leaders he perceives as "strong."
Some of our "checks and balances" were really just gentlemen's agreements on agreed upon ethical behavior and there was no real regulatory mandate behind them.

Funnily enough, the South African crap gibbon has been dirty-deleting his own posts on X in the days after the election. He'd be a good one to make an example of.
